7 Ways to Use Lemon Peels

Henry Wadsworth Longfellow may have kept a “make-believe summer” in his study with a lemon-tree that was ten feet high but he could not have told you what to do with those lemon peels!

Stephen Rouelle ‏@bigislandchef, on the other hand, knows quite well what to do with the peel of this fruit. The chef shared a few ideas via Twitter for lemons, limes and oranges.

Although my favorite idea from the chef is to create a simple candy dish by boiling and draining the peels twice, then boiling the peels one more time in a mixture of 1 cup of peel to 2 cups sugar and 1/2 cup of water, you could also dry the peels and use them in many ways including:

(1) Infused with tea,
(2) Infused with oil,
(3) Combined with spices and herbs such as pepper and salt,
(4) Chopped into for salads, soups and marinades,
(5) Included as a pickling ingredient,
(6) Ground and dusted on chicken or fish, or
(7) Placed in bottled water
